QUICK + EASY ENTERTAINING TIPS

corn, barley + basil salad

A simple combination of fresh, summer ingredients.

1/2 cup pearl barley
2-3 tablespoons extra virgin olive oil, divided
1-2 teaspoons white wine vinegar
Salt, to taste
Freshly ground black pepper
1 ear corn
2 tablespoons chopped fresh basil
2 tablespoons chopped flat-leaf parsley

1. In a small saucepan, bring water to a boil. Add barley, cover and reduce heat and simmer. Cook for 20-25 minutes until barley in tender. Transfer to a medium bowl and toss with 1 tablespoon oil.
2. In a small bowl, combine vinegar and remaining oil and season with salt and pepper. Set aside.
3. Meanwhile, in a large pot boil enough water to cover corn over high heat. Add corn and cook until kernels are bright yellow, about 5 minutes. Remove corn and set aside to cool. When cool enough to handle, remove kernels from corn. Stand corn on a cutting board and run a knife down each side of corn until kernels are removed. Add corn to barley along with basil and parsley. Pour dressing over barley and toss to combine. Season with salt and pepper and serve.

Serves 1.
