QUICK + EASY ENTERTAINING TIPS

chopped vegetable salad | photo by: James PadillaI developed this recipe after having something very similar at a local restaurant. It’s a great recipe that can easily be modified with any ingredients you like. Take some help from your local salad bar for items that you only want in a small quantity.

1 1/2 cups fresh baby arugula
1/4 carrot, thinly sliced
1/4 celery stalk, thinly sliced
1/4 cucumber, thinly sliced
1/4 cup cauliflower, thinly sliced

Lemon-Feta Vinaigrette
1/2 teaspoon Dijon mustard
Juice from 1/2 lemon
Salt, to taste
Freshly ground black pepper
1-2 tablespoons extra virgin olive oil
1 ounce feta cheese, finely crumbled

1. In a large bowl, combine arugula, carrot, celery, cucumber and cauliflower and toss to combine.
2. In a medium bowl, combine mustard, lemon juice, salt and pepper. Slowly pour in olive oil, whisking to emulsify. Stir in feta cheese. Pour enough vinaigrette over salad to coat and gently toss to combine. Serve immediately.

Serves 1.
