QUICK + EASY ENTERTAINING TIPS

carrot and raisin salad

When I first made this recipe, I wasn’t really sure I’d like the combination of carrots and raisins but after one bite, I was completely convinced. The addition of orange juice to the dressing balances out some of the sweetness from both the carrots and the raisins and really helps round out the flavor of this really easy side salad. By using prepackaged, shredded carrots, it makes this salad come together in just minutes.

1 teaspoon canola oil
2 1/2 tablespoons orange juice
Salt, to taste
Freshly ground black pepper
1-2 carrots, peeled and shredded (about 1 1/4 cups)
3 tablespoons raisins
Flat-leaf parsley, optional
1-2 tablespoons walnuts or almonds, toasted, optional

In a bowl, combine canola oil and orange juice. Season with salt and pepper. Add carrots and raisins and toss to combine. Stir in parsley and nuts (if using), and serve.

Serves 1.
