QUICK + EASY ENTERTAINING TIPS

caramelized onion, pear and brie panini

To make sandwich, use either a panini press or a grill pan and weigh it down to press sandwich.

2 slices ciabatta bread
1 tablespoon unsalted butter
1 medium onion, thinly sliced
Salt, to taste
Freshly ground black pepper
3 ounces brie cheese, sliced
1/4 pear, thinly sliced
1 tablespoon extra virgin olive oil

1. Heat a panini press or preheat a grill pan to medium heat.
2. Meanwhile, in a medium sauté pan, melt butter over medium heat. Add onion and sauté until caramelized, stirringly occasionally, 20-25 minutes. Season with salt and pepper. Remove onions and set aside.
3. Place brie on insides of bread. Add pear slices to bottom piece of bread, followed by onions. Drizzle with olive oil and season with salt and pepper.
4. Close sandwich and place in a panini press or on grill pan and grill for 4-5 minutes, until cheese starts to melt. Flip sandwich and continue to grill for another 2-3 minutes, until nicely charred and cheese is melted. Serve warm.

Serves 1.
