QUICK + EASY ENTERTAINING TIPS

caramelized butternut squash

The addition of brown sugar turns the butternut squash into little nuggets of crunchy, sweet goodness when it finishes roasting in the pan.

1 cup diced butternut squash
1 tablespoons extra virgin olive oil
Salt, to taste
Freshly ground black pepper
1 tablespoon light brown sugar

Preheat oven to 425°F. Place squash on a baking sheet and drizzle with olive oil. Season with salt and pepper. Gently toss to combine. Top with brown sugar and roast for 35-40 minutes, until softened and just lightly browned. Serve warm.

Serves 1.
