QUICK + EASY ENTERTAINING TIPS

caesar salad

To serve as a wrap sandwich, toss whole leaves with dressing, then stack in a tortilla. It’s easier to eat as a sandwich if leaves are left whole.

1/2 teaspoon Dijon mustard
1 small clove garlic, finely minced, or to taste
Juice from 1/2 lemon
1/4 cup Parmigiano-Reggiano, freshly grated, plus extra for garnish
Salt, to taste
Freshly ground black pepper
2-3 tablespoons extra virgin olive oil
Romaine lettuce (about 2 cups)

1. In a medium bowl, combine mustard, garlic and lemon juice. Season with salt and pepper. Add Parmigiano-Reggiano and combine. Slowly whisk in olive oil until emulsified.
2. Shred or cut lettuce into bite-sized pieces and transfer to a bowl. Pour in dressing, gently tossing to coat all of romaine. Transfer to a serving bowl and top with additional Parmigiano-Reggiano and serve.

Serves 1.
