QUICK + EASY ENTERTAINING TIPS

cabbage + cilantro coleslaw

This is a zesty interpretation of a pretty traditional coleslaw. Adding in the lime juice and a bit of cilantro give it a slight Mexican-inspired flavor. Thinly sliced red onion would also add a another nice, crunchy element to the salad.

1/4 head green cabbage
1-2 scallions, white and light green parts, thinly sliced
2 tablespoons fresh cilantro, roughly chopped
2 tablespoons fresh parsley, roughly chopped
1 tablespoon mayonnaise
1 tablespoon sour cream
1/2 teaspoon sugar
Juice of 1/2 lime
Salt, to taste
Freshly ground black pepper

1. Remove any tough outer pieces of cabbage and cut away the core. Shred cabbage (or thinly slice) and place in a bowl along with scallions, cilantro and parsley.
2. In a small bowl, combine mayonnaise, sour cream, sugar and lime juice. Season with salt and pepper. Toss to combine with cabbage mixture and refrigerate until ready to serve.

Serves 1.
