QUICK + EASY ENTERTAINING TIPS

brown rice salad with brussels sprouts

Once I discovered how I much I liked Brussels sprouts (after not liking them at all as a kid), I starting using them in a bunch of different dishes, but none as easy as this one. Tossed in with some simple brown rice is a great way to make something really easy, even quicker if you have some leftover rice on hand.

1 tablespoon extra virgin olive oil
1/4 medium yellow onion, thinly sliced
Salt, to taste
Freshly ground black pepper
1 cup Brussels sprouts, ends trimmed and outer leaves removed, thinly sliced
1 tablespoon flat-leaf parsley, roughly chopped

1. In a medium saucepan, boil 1 cup water. Add brown rice and reduce heat to low, cover and simmer until rice is cooked and water is absorbed, about 20 minutes.
2. In a medium sauté pan, heat olive oil over medium heat. Add onions and cook until just softened, about 5 minutes. Season with salt and pepper. Add Brussels sprouts and cook for another 5 minutes, until bright green and fragrant. Remove from heat and stir in parsley. Combine with rice and serve warm or at room temperature.

Serves 1.
