To mix things up a bit, I like to sometimes stuff the cheese inside of the burger. Any good, melting cheese works and it’s a great treat when you bite into the burger.
1/3 pound ground beef
1 ounce blue cheese
Salt, to taste
Freshly ground black pepper
1 slice yellow onion
1 tablespoon extra virgin olive oil
Scallion mayonnaise, for serving
1 small hamburger roll, split
1. Preheat grill or grill pan to medium heat. Using wet hands, form beef into burger. Using your thumb, carefully press into center of burger, making a small indentation. Place a piece of blue cheese in center and fold up burger around cheese, enclosing entirely. Season both sides with salt and pepper. Grill for about 5 minutes on one side. Flip and cook for another 2-3 minutes, until desired doneness.
2. Meanwhile, brush onion with oil and gill until nicely charred on both sides, about 5-7 minutes. Set aside.
3. Remove burger and allow to rest for 2-3 minutes. Spread scallion mayonnaise on one side of roll. Top burger with grilled onions and serve.
