QUICK + EASY ENTERTAINING TIPS

baked stuffed potato with broccoli

Adding in some broccoli along with the potato makes it a slightly more substantial meal, and I really like the two flavors together.

1 russet potato
1/2 cup fresh broccoli florets, trimmed
2-3 tablespoons milk or cream
2 tablespoons unsalted butter
Salt, to taste
Freshly ground black pepper

1. Preheat oven to 400°F. Poke a few holes in top of potato with a fork and bake for 45-55 minutes.
2. Meanwhile, in a medium saucepan, boil water. Cook broccoli until bright green, about 3 minutes. Remove with a slotted spoon and transfer to a bowl of ice water. Set aside.
3. When potato is cool enough to handle, cut off a small, thin layer on top of potato lengthwise and discard. Scoop out inside of potato, taking care not to cut through to skin. Place scooped-out potato in a mixing bowl and add milk or cream, butter and season with salt and pepper. Whisk together until smooth (add more milk if necessary), and is as creamy as you like it.
4. Remove broccoli from water and gently pat dry. Cut any large pieces into smaller ones and fold into potato mixture. Place mixture back into potato shell. Bake for another 20-25 minutes, until slightly brown on top. Serve warm.

Serves 1.
