QUICK + EASY ENTERTAINING TIPS

avocado, fennel + orange salad

A simply refreshing salad that is creamy from the avocado and crunchy from the fennel, and the addition of the citrus really brightens it all up. Avocado oil can be found at many specialty markets but if you can’t find it, simply replace with a fruity extra virgin olive oil.

1 Hass avocado
Juice from 1 lime, divided
1 medium orange
1/4 fennel bulb, cored and thinly sliced, stems discarded
1 tablespoon roughly chopped fennel fronds
Salt, to taste
Freshly ground black pepper
1-2 tablespoons avocado oil

1. Cut avocado in half, remove and discard pit. Slice one half (save remaining half for another use) and place in a medium bowl and toss with juice from 1/2 lime. Set aside.
2. Cut peel from top and bottom of orange so it stands upright on counter. Using a sharp knife, cut away skin, exposing flesh. Cut along each side of membranes to separate orange segments. Place segments in bowl with avocado along with fennel slices and fronds. Season with salt and pepper. Add avocado oil and gently toss to combine. Add more lime juice if necessary and serve.

Serves 1.
