QUICK + EASY ENTERTAINING TIPS

arugula salad with shaved parmigiano-reggiano

When making such a simple salad like this one, it’s really important to use only the best ingredients you can, because there are so few in it. Fresh arugula from the garden is always my preference for this salad, topped with some really good salty Parmigiano-Reggiano.

1 tablespoon extra virgin olive oil
Juice from 1/2 lemon
Salt, to taste
Freshly ground black pepper
6 ounces arugula
Freshly shaved Parmigiano-Reggiano, for garnish

In a small bowl, whisk together olive oil, lemon juice, salt and pepper until just combined. Add arugula and toss to combine. Transfer to a plate and top with shaved Parmigiano-Reggiano and serve.

Serves 1.
