QUICK + EASY ENTERTAINING TIPS

arugula + pear salad with honey vinaigrette

I grew up loving pears and when they are ripe and fresh in season, they are one of my favorite fruits to eat. I especially love them in salads where they add a nice, natural sweetness all their own.

2 cups baby arugula
1/4 cup flat-leaf parsley, hand torn
1/2 pear, thinly sliced
1/2 large carrot, peeled
1 1/2 teaspoons honey
1 1/2 teaspoons white wine vinegar
Salt, to taste
Freshly ground black pepper
2-3 tablespoons extra virgin olive oil

1. In a medium bowl, add arugula, parsley and pear.
2. Cut carrot in half and slice into thin, diagonal pieces. Add to bowl of arugula.
3. In a small bowl, combine honey and vinegar and salt and pepper. Slowly whisk in olive oil to emulsify. Pour enough vinaigrette over salad to coat. Serve immediately.

Serves 1.
