A few simple ingredients really make this a quick and easy salad. You can add just about anything else you like (even substitute with mixed greens or watercress if you prefer).
2 cups baby arugula
1/4 cup flat-leaf parsley, hand torn
1-2 radishes, thinly sliced
1 teaspoon Dijon mustard
Juice from 1/2 lemon
Salt, to taste
Freshly ground black pepper
1-2 tablespoon extra virgin olive oil
1-2 ounces goat cheese, crumbled
1. In a medium serving bowl, add arugula, parsley and radishes.
2. In a small bowl, combine mustard and lemon juice and season with salt and pepper. Slowly whisk in olive oil to emulsify. Pour enough vinaigrette over salad to coat. Top with goat cheese and serve immediately.
