A simple lime vinaigrette over the top of this salad keeps it light and refreshing. Add in anything else you like to this salad: black beans, fresh corn or even some diced, seasonal tomatoes.
2 cups baby arugula
1 Hass avocado
1 scallion, white and light green parts, thinly sliced
1/8 red onion, thinly sliced
Salt, to taste
Freshly ground black pepper
Juice from 1/2 lime
2-3 tablespoons extra virgin olive oil
Fresh cilantro, optional
1. In a medium serving bowl, add greens.
2. Cut avocado in half, remove and discard pit. Slice one half (save remaining half for another use) and add to bowl of greens along with scallions and red onion. Season with salt and pepper.
3. In a small bowl, combine lime juice and olive oil. Pour over salad and top with cilantro (if using) and serve.
