QUICK + EASY ENTERTAINING TIPS

arugula, avocado + egg salad sandwich

A simple egg salad sandwich gets some added protein from the avocado while baby arugula adds a bit of freshness. For additional flavor, add in a drizzle of lemon (or lime) juice over the top to really brighten it up.

1 tablespoon mayonnaise
2 slices multigrain bread
1 recipe egg salad
Salt, to taste
Freshly ground black pepper
1 Hass avocado
1 cup baby arugula

1. Spread mayonnaise on inside slices of bread. Add egg salad on bottom slice. Season with salt and pepper.
2. Cut avocado in half, remove and discard pit. Slice one half (save remaining half for another use) and place on top of egg salad. Top with arugula, close up sandwich and serve.

Serves 1.
