5 recipes for butternut squash

Sometimes it’s a challenge coming up with ways to use one ingredient in a variety of ways, and the bigger the ingredient, the bigger the challenge. I love the flavors of fall, and butternut squash is one of my most favorite ingredients of this season. It’s a really versatile ingredient that works in a lot of different recipes.


The first thing you need to do before you begin is to peel it. Trim off both ends, so that the base of the squash can rest flat on a counter. Using a vegetable peeler and starting at the top, slowly drag it down the whole length of the squash. Continue around the squash until you’ve finished (you may have to peel a few pieces of skin from one spot until you get down to the orange flesh). The skin is also hard so be sure to go slowly. Once it’s peeled, remove the inside seeds (clean them off and roast them on a baking sheet for crunchy seeds that are perfect in a salad or as a garnish for this butternut squash and apple soup.

One of the simplest ways to eat butternut squash is to roast it in the oven and make caramelized butternut squash. By tossing the squash with a little brown sugar, the edges become crispy and deliciously sweet.

For a quick salad, try roasted squash panzanella. Tangy goat cheese and crunchy bread balance out the sweetness of this salad perfectly.

For an easy weeknight dinner, pasta with roasted butternut squash + parmesan is a big bowl of creamy, fall flavors.

And finally, for those weekends when you have a little more time to cook, I love this recipe for butternut squash lasagna. There isn’t much more comforting than a serving of gooey, cheesy lasagna, and this one delivers, along with all the great flavor of the butternut squash.
