QUICK + EASY ENTERTAINING TIPS

wild rice salad with almonds + raisins

This is a basic wild rice salad that’s simple to serve and full of lots of crunchy fruit and vegetables.

1 cup water
1/3 cup wild rice
2 tablespoons sliced almonds
1/2 red or green apple, diced
1/2 celery stalk, diced
2 tablespoons raisins
1 teaspoon white wine vinegar
2 tablespoons extra virgin olive oil
Salt, to taste
Freshly ground black pepper
1 tablespoon finely minced flat-leaf parsley

1. In a medium saucepan, bring water to a boil. Add rice and reduce heat to simmer. Cook, uncovered, for 30-40 minutes, until rice is tender. Drain and transfer to a bowl to cool. Cover and chill for 1 hour.
2. Preheat oven to 425°F. Place almonds on a baking sheet and toast for 8-10 minutes until golden brown. Add almonds, apple, celery and raisins to rice. Add vinegar and olive oil and season with salt and pepper. Stir in parsley and serve.

Serves 1.
