QUICK + EASY ENTERTAINING TIPS

peach and prosciutto salad

This is a really simple salad that comes together in just minutes. It looks beautiful on a serving plate which makes it perfect for easy entertaining. For a slight variation, try grilling the peaches, allowing them to cool slightly before wrapping around prosciutto.

2 thin slices prosciutto, cut in half
1/2 peach, cut into 4 wedges
1 teaspoon balsamic vinegar, plus extra for drizzling
2 tablespoons extra virgin olive oil, plus extra for drizzling
Salt, to taste
Freshly ground black pepper
4 ounces mixed salad greens

1. Wrap a piece of prosciutto around each peach slice and set aside.
2. In a mixing bowl, combine balsamic vinegar and olive oil and season with salt and pepper. Gently pour almost all of dressing over salad greens and toss to combine. Pile salad greens in middle of plate and place peach wedges around salad. Drizzle remaining dressing over entire salad and serve.

Serves 1.
