QUICK + EASY ENTERTAINING TIPS

pasta with italian sausage, tomatoes and corn

This recipe also works well with cheese tortellini instead of the ziti.

2 ounces ziti
2 tablespoons extra virgin olive oil, divided
1 sweet or spicy Italian sausage, casing removed
1/2 ear of corn
1/4 cup cherry tomatoes
Salt, to taste
Freshly ground black pepper
Fresh basil, hand torn
2 ounces Parmigiano-Reggiano, finely grated

1. Bring a pot of water to boil and add salt. Add pasta and cook for 7-10 minutes, until al dente. When pasta is done, drain and set aside. Toss with 1 tablespoon olive oil to prevent sticking.
2. In a medium sauté pan, cook sausage over medium heat until browned, 5-7 minutes, breaking up into bite-sized pieces. Transfer to a plate and set aside.
3. Meanwhile, preheat grill or grill pan to medium heat. Grill corn for 3-4 minutes, turning occasionally to grill evenly on all sides. Set aside to cool. When cool enough to handle, cut off kernels.
4. Combine pasta, sausage, corn, tomatoes and season with salt and pepper. Gently stir in basil and Parmigiano-Reggiano and serve.

Serves 1.
