A few simple ingredients make for a quick and easy orzo salad.
1/2 cup orzo
1/4 cup black olives, pitted and minced
1/4 red onion, thinly sliced
1 tablespoon minced fresh oregano
2 tablespoons extra virgin olive oil
Freshly ground black pepper
2 ounces feta cheese, crumbled
Bring a pot of water to boil. Add orzo and cook for 7-10 minutes, until al dente. When pasta is done, drain and transfer to a medium bowl. Add remaining ingredients and gently toss to combine. Serve cold, or at room temperature.
