QUICK + EASY ENTERTAINING TIPS

mexican potato salad

A nice alternative to a more traditional potato salad. For added spice, leave in the seeds from the peppers. The jalapeño lime olive oil is made by O olive oil and can be found at many specialty markets or online at www.ooliveoil.com.

2 medium Yukon gold potatoes, diced
1 poblano pepper, diced
1/4 jalapeño, seeded and diced
1/4 white onion, thinly sliced
1 tablespoon extra virgin olive oil
Salt, to taste
Freshly ground black pepper
Juice from 1/2 lime
1 teaspoon honey
2 tablespoons jalapeño lime olive oil
1 scallion, white and light green parts, thinly sliced
1 tablespoon roughly chopped fresh cilantro

1. Place potatoes in a pot of cold, salted water and bring to a boil. Cook until fork tender, about 10-12 minutes. Transfer to a medium bowl and set aside to cool slightly.
2. Preheat oven to 425°F.
3. Place poblano and jalapeño peppers on a baking sheet along with onion. Drizzle with olive oil and season with salt and pepper. Roast until lightly charred, about 15-20 minutes (remove onions sooner when done). Set aside to cool slightly.
4. When cool enough to handle, roughly chop poblano and jalapeño peppers and add to bowl of potatoes along with onions.
5. In a small bowl, combine lime juice, honey and jalapeño lime olive oil. Season with salt and pepper. Add to potatoes, along with scallion and cilantro and toss to combine. Serve at room temperature.

Serves 2.
