QUICK + EASY ENTERTAINING TIPS

matchstick fruit salad

This is a great salad to serve along with my honeydew + ginger sushi or kiwi sushi rolls. Save any remaining ginger simple syrup and use it as a base in a cocktail or in a summer drink topped with a bit of sparkling soda.

Ginger Simple Syrup
1/2 cup granulated sugar
1/2 cup cold water
1/3 cup fresh ginger, peeled and roughly chopped

1/4 cup cantaloupe, cut into matchsticks
1/4 cup green apple, cut into matchsticks
1 teaspoon lemon juice
3-4 green grapes, sliced

1. Make ginger simple syrup. In a small saucepan, add sugar, water and ginger and bring to a boil. Stir until sugar dissolves. Cover and allow to steep for 10-15 minutes. Cool then strain. Refrigerate until ready to use.
2. In a small bowl, combine cantaloupe and green apple and toss with lemon juice. Add enough simple syrup to lightly coat and toss to combine. Transfer to a serving plate and top with sliced grapes. Serve immediately.

Serves 1.
