This is a really easy dressing that’s perfect over a simple green salad of fresh peppery arugula.
1/2 shallot, finely diced
1/2 teaspoon Dijon mustard
1 teaspoon red wine vinegar
1 teaspoon honey
Salt, to taste
Freshly ground black pepper
2-3 tablespoons extra virgin olive oil
In a small bowl, whisk together shallot, mustard, red wine vinegar and honey and season with salt and pepper. Slowly whisk in olive oil to emulsify. Serve over fresh salad greens.
