QUICK + EASY ENTERTAINING TIPS

blue cheese and pear salad

When pears are in season, I love to make this simple fresh salad. Adding on a bit of blue cheese crumbled over the top gives the salad a sharp, creamy flavor and makes it super delicious.

1/8 cup walnuts, chopped
1/2 Bosc or Anjou pear, cored
2-3 tablespoons extra virgin olive oil, divided, plus extra for drizzling
1-2 teaspoons balsamic vinegar, plus extra for drizzling
Salt, to taste
Freshly ground black pepper
4 ounces chopped frisée or other mixed salad greens
2 ounces Gorgonzola or other blue cheese, cut into 2 slices

1. Preheat oven to 425°F. Place walnuts on a baking sheet and toast until lightly golden brown, 3-4 minutes. Set aside. Leave oven on.
2. Wipe off baking sheet and place pear on it, cut-side down. Brush outside of pear with 1 tablespoon olive oil and roast for 15-20 minutes, until slightly golden. Allow to cool slightly.
3. In a mixing bowl, combine balsamic vinegar and remaining 1-2 tablespoons olive oil and season with salt and pepper. Gently toss a bit of dressing with salad greens and transfer to a serving plate. Add pear, followed by blue cheese and walnuts. Drizzle remaining dressing over top and serve.

Serves 1.
