Apple or pear slices, or even strawberries make a nice addition to this simple salad.
2 ounces goat cheese, chilled and sliced into 2, 1-ounce slices
Breadcrumbs, for dredging
2 tablespoons extra virgin olive oil, divided
4 ounces mixed salad greens
1 tablespoon lemon juice
Salt, to taste
Freshly ground black pepper
1. Preheat oven to 425°F.
2. Place breadcrumbs in a shallow dish and coat goat cheese on all sides. Place on an aluminum foil-lined baking sheet and drizzle with 1 tablespoon olive oil. Bake for 4-5 minutes until lightly browned. Gently turn cheese over and cook for another 2-3 minutes, until cheese is soft and just golden brown. Allow cheese to cool slightly while preparing salad greens.
3. Place salad greens in a bowl. Add lemon juice, remaining 1 tablespoon olive oil and season with salt and pepper. Gently toss to combine. Mound greens on a plate, top with goat cheese and serve.
