QUICK + EASY ENTERTAINING TIPS

antipasto salad

This is a quick salad that combines all the flavors of an antipasto platter into a salad. You can play around with the ingredients as you like, incorporating in some of your own preferences.

1-2 ounces genoa salami, sliced and cut into matchsticks
1-2 ounces aged provolone cheese, sliced and cut into matchsticks

Vinaigrette
2 tablespoons extra virgin olive oil
1 tablespoon red wine vinegar
1 teaspoon finely chopped shallots
1 tablespoon finely chopped pitted black olives
Freshly ground black pepper

1/2 head frisée

1. Cut matchsticks into small bite-szized cubes and set aside.
2. In a large bowl, combine ingredients for vinaigrette. Add frisée to bowl with salami and provolone cheese and gently toss everything to coat with vinaigrette. Transfer to a serving bowl and serve.

Serves 1.
