QUICK + EASY ENTERTAINING TIPS

risotto cakes

These are really nice served with a simple spinach salad tossed with a little olive oil, salt and pepper.

Half recipe risotto
1/2 cup flour
Salt, to taste
Freshly ground black pepper
2 tablespoons unsalted butter

1. Remove cooled risotto from refrigerator and form into two equal round disks.
2. In a shallow dish, add flour and season with salt and pepper.
3. In a sauté pan, melt butter over medium heat. Dredge risotto cakes in flour, shaking off excess as you work. Add to pan and cook for about 3-4 minutes per side, turning occasionally, until golden brown. Remove with slotted spoon and drain on a paper towel-lined plate and allow to cool slightly before serving.

Makes 2 risotto cakes.
