QUICK + EASY ENTERTAINING TIPS

risotto balls

Half recipe risotto
Fresh mozzarella cheese, cut into four 1/4-inch pieces
1/2 cup flour
Salt, to taste
Freshly ground black pepper
1 egg
1/2 cup breadcrumbs
1/8 cup Parmigiano-Reggiano, finely grated
2-3 tablespoons vegetable oil

1. Remove cooled risotto from refrigerator and shape into four 2-inch balls. Using your thumb, gently make an indent into center of each ball and insert a piece of mozzarella cheese. Enclose cheese with risotto, reshaping as necessary to fully enclose all of cheese.
2. In a shallow dish, add flour and season with salt and pepper. In another shallow dish, beat egg. In another shallow dish, combine breadcrumbs and Parmigiano-Reggiano.
3. In a sauté pan, heat oil over medium heat. Roll each risotto ball in flour, followed by egg, then breadcrumb mixture, shaking off excess as you work. Coat well. Continue until all risotto balls are finished. Add to pan and cook for 2-3 minutes per side, turning occasionally, until golden brown. Remove with slotted spoon and place on a paper towel-lined plate and allow to cool for 2-3 minutes before serving.

Makes 4 risotto balls.
