QUICK + EASY ENTERTAINING TIPS

peach chutney

This simple chutney is perfect on a grilled prosciutto + fontina sandwich. It’s a nice balance of sweet from the fresh peaches and tangy from the Dijon mustard and a simple recipe using fresh peaches.

1 tablespoon unsalted butter
1 tablespoon extra virgin olive oil
1 shallot, diced
Salt, to taste
Freshly ground black pepper
1 small clove garlic, finely minced
2 fresh peaches, peeled and diced
1 tablespoon Dijon mustard
1 tablespoon light brown sugar

In a medium saucepan, heat butter and oil over medium heat. Add shallot and cook until softened, about 5 minutes. Season with salt and pepper. Add garlic and cook for another 1-2 minutes. Add peaches, mustard and sugar and stir. Cook until thickened, about 10 minutes (mash slightly if you want a less chunky consistency). Remove from heat and allow to cool to room temperature before serving.

Makes approximately 1 1/4 cups.
