garlic mashed potatoes

Roasting a whole head of garlic is worth it for the flavor of it in this potatoes. The result is a bowl of creamy potatoes with a nice, slightly sweet garlic flavor.

1 head garlic

1 tablespoon extra virgin olive oil
2 large Yukon gold potatoes, peeled and diced
1/4 cup plus 2 tablespoons milk, at room temperature
1-2 tablespoons unsalted butter, softened
Salt, to taste
Freshly ground black pepper

1. Preheat oven to 425°F. Cut off very top of garlic bulb to expose just tops of garlic cloves. Place garlic bulb in center of a piece of aluminum foil large enough to cover whole bulb and drizzle with olive oil. Wrap tightly, twisting foil at the top. Place on a baking sheet and roast for about 1 hour minutes, until garlic is golden in color. Remove from oven and set aside to cool.
2. When garlic is cool enough to handle, squeeze about 4 cloves into a small bowl and mash until softened (save remaining cloves for a later use).
3. Meanwhile, place potatoes in a medium saucepan and cover with water. Add a pinch of salt and bring to a boil; reduce heat and simmer until potatoes are fork tender, about 30 minutes.
4. Drain potatoes and return back to pan. Gently mash with a potato masher (or fork). Add 1/4 cup milk and 1 tablespoon butter and mash until combined. Season with salt and pepper. Add mashed garlic and mix well. Add more butter or milk if necessary to reach desired consistency. Serve warm.

Serves 2.
