QUICK + EASY ENTERTAINING TIPS

dijon mashed potatoes

Adding a hint of mustard to the potatoes gives them an unexpected bite that balances really well with their creaminess.

1 medium potato, diced 

1 tablespoon unsalted butter

1-2 tablespoons milk
2 teaspoons Dijon mustard
Salt, to taste

Freshly ground black pepper

1. Place potatoes in a medium pot and add salt. Cover with cold water and bring to a boil over medium-high heat. Cook until potatoes are fork tender, about 20-25 minutes. Drain potatoes and return potatoes back to pan.

2. Gently mash potatoes. Add butter, milk, mustard and season with salt and pepper. Combine until well blended. Add in more milk if necessary to reach desired consistency. Serve warm.

Serves 1.
