QUICK + EASY ENTERTAINING TIPS

creamy mashed potatoes with horseradish

A hint of horseradish really adds an unexpected kick to ordinary mashed potatoes. You can adjust the amount based on your own preference. The leftover portion can be used another day for potato cakes.

2 medium potatoes, peeled and diced
1 tablespoon unsalted butter
3 tablespoons sour cream
1 1/2 teaspoons horseradish
Salt, to taste
Freshly ground black pepper

1. Place potatoes in a medium pot and add salt. Cover with cold water and bring to a boil over medium-high heat. Cook until potatoes are fork tender, about 20-25 minutes. Drain potatoes and return potatoes back to pan.
2. Gently mash potatoes. Add butter, sour cream and horseradish and season with salt and pepper. Mix until well blended and smooth. Place half of mashed potatoes in refrigerator until ready to use for another recipe. Serve warm.

Serves 2.
