QUICK + EASY ENTERTAINING TIPS

baked sweet potato fries

I love roasting potatoes and this is a slightly healthier way to eat fries. This recipe works well with russet and Yukon gold potatoes as well.

1 sweet potato, cut into thick wedges
1-2 tablespoons extra virgin olive oil
Salt, to taste
Freshly ground black pepper

Preheat oven to 425°F. Place wedges on a baking sheet and drizzle with olive oil. Season with salt and pepper and gently toss to evenly coat, making sure potatoes are completely coasted with oil. Lay wedges flat on baking sheet. Bake for 30-40 minutes, turning once halfway through, until golden brown and crispy.

Serves 1.
