QUICK + EASY ENTERTAINING TIPS

spaghetti carbonara

This is a quick and easy meal to make when you really don’t feel like cooking. It’s even better with homemade pasta, but you can use dried spaghetti as well (just adjust cooking time on pasta). Either way, it’s pure comfort food in a bowl.

1 tablespoon extra virgin olive oil

1-2 slices thick-cut bacon, diced
1 egg
1/4 cup Parmigiano-Reggiano, finely grated, or more to taste
2 ounces fresh spaghetti
Salt, to taste

Freshly ground black pepper


1. In a large sauté pan, heat olive oil over medium heat. Add bacon and sauté for about 5 minutes, until crisp. Drain off any excess grease.
2. In a small bowl, beat egg and Parmigiano-Reggiano together, stirring well to prevent lumps. Set aside.
3. Bring a pot of water to boil and add salt. Add pasta and cook about 3-4 minutes (cook 7-10 minutes if using dried pasta), until al dente. Reserve some pasta water to thicken sauce later if necessary. Add hot, drained pasta to pan with bacon and toss to combine for about 1 minute to coat.

4. Remove pan from heat and pour egg and cheese mixture into pasta, stirring quickly until egg thickens, but does not scramble (this is done off the heat to prevent this from happening). Add some pasta water if sauce is too thick. Season with salt and pepper and top with additional Parmigiano-Reggiano before serving.

Serves 1.
