QUICK + EASY ENTERTAINING TIPS

pasta with wilted spinach

Fresh baby spinach acts as the lead role is this really simple pasta dish. Crushed red pepper flakes give it a nice bite and a little bit of heat (if you like it a little hotter, simply add in more to taste).

2 ounces spaghetti
1 tablespoon extra virgin olive oil
1/8 yellow onion, thinly sliced
Salt, to taste
Freshly ground black pepper
1 clove garlic, finely minced
1/4 teaspoon crushed red pepper flakes
1 1/2 cups fresh baby spinach
2 ounces feta cheese, crumbled

1. Bring a pot of water to boil and add salt. Add pasta and cook for 7-10 minutes, until al dente. When pasta is done, drain and set aside.
2. In a medium sauté pan, heat olive oil over medium heat. Add onion and cook for 5 minutes, until onion becomes translucent. Season with salt and pepper. Add garlic and red pepper flakes and cook for another 1-2 minutes, until garlic becomes fragrant. Add spinach and continue to cook just until spinach starts to wilt.
3. Add pasta to pan and toss to combine. Place in a serving bowl, top with feta cheese and serve.

Serves 1.
