QUICK + EASY ENTERTAINING TIPS

pasta with marinated artichokes

This is a great place to take advance of the prepared section of your local market or from your favorite Italian market. Buying artichokes that are already marinated makes this dish come together in no time.

2 ounces whole-wheat spaghetti
1 tablespoon extra virgin olive oil
1/2 shallot, thinly sliced
1 small clove garlic, finely minced
Salt, to taste
Freshly ground black pepper
1 tablespoon white wine
1 tablespoon fresh lemon juice, plus extra for drizzling
1/4 cup low-sodium vegetable stock
2 marinated artichokes, stems removed and sliced
1 teaspoon roughly chopped fresh thyme
1 tablespoon roughly chopped flat-leaf parsley
1-2 ounces Parmigiano-Reggiano, freshly grated

1. Bring a pot of water to boil and add salt. Add pasta and cook for 7-10 minutes, until al dente. When pasta is done, drain and set aside, reserving 1/4 cup of pasta water.
2. In a medium sauté pan, heat olive oil over medium heat. Add shallot and cook until softened, about 5 minutes. Add garlic and cook for 1-2 minutes. Season with salt and pepper. Deglaze pan with wine and lemon juice and cook for about 1 minute. Add stock and pasta water and simmer for 2-3 minutes. Add artichokes, thyme and parsley and cook until artichokes are heated through, about 3 minutes.
3. Add pasta and toss to combine. Transfer to a serving bowl and top with Parmigiano-Reggiano and a drizzle of lemon juice. Serve warm.

Serves 1.
