QUICK + EASY ENTERTAINING TIPS

One tip for incorporating the dough into the egg well is to slowly, and carefully open up the circle of flour, increasing its size as you pull the flour into the egg well. This will give you more room inside of the egg well to work as you bring in the flour.

1 cup semolina flour
1 cup all-purpose flour
3 extra large eggs
Pinch of salt
1 teaspoon extra virgin olive oil
1 tablespoon water

1. In a medium bowl, combine flours. Transfer to counter and add make a well in center of mound, making sure sides are high. Carefully crack eggs into well, then add salt, oil and water. Using a fork, slowly break apart eggs and bring in some of flour mixture into egg well and carefully mix until incorporated. Pull in more flour into well, a little at a time, until most of flour has been incorporated and a dough has formed. Knead dough with hands for about 5-7 minutes, adding flour to dough and your hands as necessary (dough should be soft but not sticky when finished). Wrap dough in plastic wrap and refrigerate for 30 minutes.
2. Cut dough into quarters and flour one piece, gently stretching it out into a rectangular shape to start it through pasta machine. With a pasta machine on setting #1, feed floured dough through, guiding dough through from underneath machine (this prevents it from getting stuck inside machine). Fold dough into thirds and pass through two more times on same setting, flouring dough as necessary to prevent sticking. Increase to setting #2; fold dough into thirds and pass through three times on this setting. Increase to setting #3 (do not fold) and pass dough through once. Continue this process until dough is smooth (through setting #5). Repeat with remaining quarters of dough.

Serves 2-4, depending on use.
