This is a great recipe for a cold winter day, when you want something to warm you up. This one-pot soup is perfect as a single serving or easy enough to increase for (holiday) entertaining. The soup can be made ahead of time, and simply warmed up and topped with the melty bread just before serving. It’s pure comfort in a bowl.

1 tablespoon unsalted butter
1 large onion, thinly sliced
Pinch of sugar
Salt, to taste

If you’re looking for an easy cookie recipe for the holidays to share with family and friends, then this is it! These no bake (and festive) cookies are also great to make if you have some little helpers in your house to help you roll them out. You can even make the truffles a couple of days in advance, leaving them in the refrigerator. The day you’re ready to serve the truffles, move them to the freezer for about 15 minutes before rolling in the chocolate so that the inside of the truffles won’t get to soft when dipped in the warm chocolate.

Welcome to the launch issue of the Gourmet Recipes for One magazine!

Each issue of our new, quarterly magazine will be an extension of the website — filled with more quick + easy recipes, along with inspiration for home, travel, entertaining and well being. This first issue is all about comfort, from some of our favorites for the home to delicious and satisfying one-pot meals. Perfect roast chicken (and what to do with it) along with some great recipes for what’s in season this winter. The magazine will continue to grow and expand with each issue, and I hope you’ll come along with us. And as we do, I want to be sure you’re getting everything you want and need from both the website, and the new magazine, so please email me any ideas and suggestions for what you’d like to see in the future.
