QUICK + EASY ENTERTAINING TIPS

yogurt-marinated lamb

Marinating the lamb in yogurt helps to keep it moist. I like to make the full recipe and have leftover lamb on hand for quick sandwiches later in the week.

6 ounces plain Greek-style yogurt
Juice from 1 lemon
Salt, to taste
Freshly ground black pepper
1-1 1/2 pounds boneless lamb of leg, butterflied

1. In a medium bowl, combine yogurt, lemon juice and season with salt. Add lamb, coating entirely. Cover and refrigerate for up to 2 hours or overnight.
2. Preheat grill or grill pan to medium heat.
3. Remove lamb from marinate and place on grill. Cook for 6-8 minutes per side, or until internal temperature is 125°F (for rare). Cook longer if desired. Remove from grill and tent with aluminum foil. Allow to rest for about 20 minutes before slicing.

Serves 2-3.
