lamb kebab with lemon-couscous salad

Lemon and lamb go so well together that I almost never make lamb without the addition of lemon somewhere. When you marinate the lamb in lemon juice, the flavor soaks into the meat which makes it tender and really flavorful. The simple yogurt sauce is a refreshing dip to serve on the side.

Leg of lamb, cut into 5 2-inch cubes
Salt, to taste
Freshly ground black pepper
1 clove garlic, finely minced
Juice from 1 lemon, divided
2 tablespoons extra virgin olive oil, divided

1/3 cup water
1/3 cup couscous
1 teaspoon dried oregano

Yogurt + Mint Sauce, for serving
Pita, for serving

1. Season lamb with salt and pepper. Add to a medium bowl and toss with garlic, juice from 1/2 lemon and 1 tablespoon olive oil. Marinate lamb in refrigerator for about 2 hours.
2. If using a wooden skewer, soak in water for 10 minutes. Preheat grill or grill pan to medium-high heat.
3. In a medium saucepan, bring water to a boil. Add couscous and stir. Remove from heat, cover and let stand for about 5 minutes, until water is absorbed. Fluff with a fork and transfer to a medium bowl. Toss with remaining 1 tablespoon olive oil and juice from remaining 1/2 lemon. Add oregano and season with salt and pepper.
4. Place lamb on skewer and place on grill. Cook for 3-4 minutes until a good sear has formed. Turn lamb and cook for another 3-4 minutes until cooked through to desired doneness.
5. Serve lamb with lemon-couscous salad along with yogurt + mint sauce and pita.

Serves 1.
