QUICK + EASY ENTERTAINING TIPS

tuna tapenade burger

I make these as sliders but you can increase the recipe for a full-sized burger if you prefer.

4 ounces tuna steak, finely chopped
1 teaspoon Dijon mustard
1 teaspoon capers, roughly chopped
1 teaspoon caper juice
1/4 shallot, finely minced
1 teaspoon finely chopped flat-leaf parsley
Cooking spray, for greasing
Salt, to taste
Freshly ground black pepper
1 tablespoon black olive tapenade
1/2 teaspoon red wine vinegar
1/2 teaspoon lemon juice
Sourdough hamburger roll, split
Red onion, thinly sliced

1. In a medium bowl, combine tuna, mustard, capers and juice, shallot and parsley. Gently mix together to form a burger. Refrigerate for 1 hour.
2. Preheat grill or grill pan to medium heat. Spray with cooking spray. Season burger with salt and pepper. Place burger on grill and cook for 5-7 minutes per side, or until desired doneness.
3. Meanwhile, in a small bowl, combine tapenade, vinegar and lemon juice. Spread tapenade on top of roll, followed by onion slices. Place burger on bottom of roll and serve.

Serves 1.
