Anchovy paste is typically found in puttanaesca sauce so if you want to add it in, simply whisk it together with the vinegar before combining the remaining sauce ingredients. Grilling the vegetables for the sauce gives it an unexpected charred flavor that’s perfect served with a nice piece of fresh swordfish.

This recipe is part of the italian-inspired menu.

1 wooden skewer, for serving

Grilled Puttanesca Sauce
5 cherry tomatoes
1/4 cup red onion, large dice
2 tablespoons extra virgin olive oil, divided
Salt, to taste
Freshly ground black pepper
1 small garlic clove, finely minced
1 teaspoon red wine vinegar
1 teaspoon chopped capers, drained
5 pitted kalamata olives, roughly chopped
1 teaspoon minced flat-leaf parsley

6 ounces swordfish steak

1. Soak skewer in water for 10 minutes. Preheat grill or grill pan to medium-high heat.
2. Place tomatoes and onion on skewer and brush with 1 tablespoon oil. Season with salt and pepper. Grill until lightly charred, about 5-7 minutes, turning as it cooks. Remove and allow to cool slightly.
3. Brush swordfish on each side with remaining 1 tablespoon olive oil and season with salt and pepper. Place swordfish on grill and cook for 5-7 minutes per side, or until desired doneness.
4. Remove vegetables from skewer and roughly chop. Add to a bowl along with remaining ingredients and toss to combine. Spoon sauce over swordfish and serve.

Serves 1.
