QUICK + EASY ENTERTAINING TIPS

shrimp salad

A classic recipe for one of my favorites. As a kid, I liked to eat this over a big bed of lettuce but it’s also just as good mounded in a grilled hot dog roll. I like mine with lots of lemon so I serve it with extra lemon for drizzling over the top.

3 cups water
1 bay leaf
1 lemon, divided
Salt, to taste
1/3 pound large shrimp (about 5-7 shrimp)
2-3 tablespoons mayonnaise
1/2 teaspoon Dijon mustard
1 teaspoon white wine vinegar
1 tablespoon minced red onion
1/2 celery stalk, minced
Freshly ground black pepper

1. In a medium saucepan, combine water, bay leaf, 1/2 lemon and salt and bring to a boil. Lower heat to medium and add shrimp. Cook for 2-3 minutes until cooked through.
2. Drain and transfer shrimp to a bowl of ice water; cool for about 3 minutes. Remove shrimp, wipe dry, peel and devein.
3. Cut shrimp into bite sized pieces and transfer to a medium bowl. Combine with remaining ingredients and serve immediately or refrigerate until ready to serve. Quarter remaining 1/2 lemon and serve with salad for drizzling.

Serves 1.
