QUICK + EASY ENTERTAINING TIPS

salmon with greens and lemon-caper vinaigrette

Salmon and capers go so perfectly together that I find I use that combination a lot. In this recipe, the capers make a nice vinaigrette that pairs really nicely with the fresh asparagus and mixed greens in a simple salad.

4 ounces fresh salmon fillet
2 tablespoons extra virgin olive oil, divided
Salt, to taste
Freshly ground black pepper
3-4 fresh asparagus stalks, rinsed and trimmed

Vinaigrette
1 teaspoon capers, drained and roughly chopped
Zest and juice from 1/2 lemon
2-3 tablespoons extra virgin olive oil
Salt, to taste
Freshly ground black pepper

4 ounces mixed salad greens
1 scallion, thinly sliced
1 tablespoon flat-leaf parsley, hand torn

1. Preheat grill or grill pan to medium heat. Brush top side of salmon with 1 tablespoon of olive oil and season with salt and pepper.
2. Drizzle 1 tablespoon of olive oil over asparagus, season with salt and pepper and toss to combine.
3. Place salmon and asparagus on grill. Cook 4-5 minutes, turning asparagus frequently but not turning salmon. Remove asparagus and when cool enough to handle, chop into 1-inch pieces. At this point, turn fish over and finish cooking for another 2-3 minutes, or until fish is cooked through.
4. Meanwhile, in a small bowl, combine ingredients for vinaigrette and whisk together until incorporated.
5. Place mixed greens, scallion, asparagus and parsley in serving bowl and toss with 1 tablespoon of vinaigrette. Remove fish and allow to cool for 2-3 minutes. When cool, cut into bite-sized pieces and serve over mixed greens. Drizzle remaining vinaigrette over top and serve immediately.

Serves 1.
