QUICK + EASY ENTERTAINING TIPS

lemon fish

This is simple dish that’s nice when served over white rice. Be sure to spoon some of the pan sauce over the fish and rice just before serving.

1 teaspoon unsalted butter
6 ounces fresh sole, cod or haddock
2 slices fresh lemon
Zest of 1/4 lemon
1 tablespoon fresh lemon juice
1 tablespoon finely minced flat-leaf parsley
Freshly ground black pepper

In a medium saucepan, melt butter over medium heat. Place fish in pan and cook for 4-5 minutes. Turn fish over and add lemon slices, lemon zest and juice and parsley and cook for another 4-5 minutes, depending on thickness, until fish is firm and cooked through. Season with pepper and serve warm.

Serves 1.
