QUICK + EASY ENTERTAINING TIPS

halibut with lemon-parsley gremolata

A gremolata is a garnish that is most commonly made from minced garlic, parsley and lemon zest and here it adds a really nice burst of fresh flavor over a simple piece of fish.

1 tablespoon extra virgin olive oil, plus extra for greasing
6 ounces fresh halibut

Lemon-Parsley Gremolata
1 small clove garlic, finely minced
1 tablespoon finely minced flat-leaf parsley
Zest from 1/2 lemon
Salt, to taste
Freshly ground black pepper

1. Preheat oven to 350°F. Grease a baking dish with a little olive oil. Brush top of halibut with 1 tablespoon olive oil.
2. Place fish in baking dish and bake for 10-12 minutes, until fish is cooked through.
3. Meanwhile, in a medium bowl, combine ingredients for gremolata and season with salt and pepper. Transfer fish to a serving plate and top with gremolata. Serve immediately.

Serves 1.
