QUICK + EASY ENTERTAINING TIPS

grilled shrimp with orange-cilantro vinaigrette

Inspired by a recipe from Bobby Flay, this recipe is light, quick and perfect to increase for entertaining.

1/4 pound large shrimp (about 3-4 shrimp), peeled and deveined
1 tablespoon extra virgin olive oil
Salt, to taste
Freshly ground black pepper

Orange-Cilantro Vinaigrette
Zest and juice of 1/4 orange
1/8 red onion, finely minced
1/2 jalapeño, seeded and finely minced
1 tablespoon extra virgin olive oil
1 teaspoon fresh cilantro, finely minced

1. Preheat grill or grill pan to medium heat.
2. In a small bowl, combine ingredients for vinaigrette. Season with salt and pepper. Set aside.
3. Toss shrimp with 1 tablespoon olive oil and season with salt and pepper. Place on grill and cook for 2-3 minutes per side, until cooked through. Remove and transfer to a serving plate. Drizzle with orange-cilantro vinaigrette and serve immediately.

Serves 1.
