QUICK + EASY ENTERTAINING TIPS

This simple recipe uses only a few ingredients so use the best quality you can of each one.

3 large scallops
3 tablespoons extra virgin olive oil, divided
Juice from 1/2 lemon
Salt, to taste
Freshly ground black pepper
1 tablespoon finely minced flat-leaf parsley

1. If using a wooden skewer, soak in water for 10 minutes. Preheat grill or grill pan to medium-high heat.
2. In a medium bowl, combine scallops and 2 tablespoons oil. Thread scallops onto skewer and place on grill. Cook for 3-4 minutes until a good sear has formed. Turn scallops and cook for another 1-2 minutes until cooked through.
3. Combine remaining 1 tablespoon oil in a small bowl and add lemon juice and set aside.
4. Remove scallops and spoon lemon-olive oil over scallops. Season with salt and pepper and finish with parsley. Serve warm.

Serves 1.
