QUICK + EASY ENTERTAINING TIPS

cucumber salad

Crunchy, tangy with a bit of spice, this is a great side to grilled salmon or simply increased and served as an easy appetizer. It’s best when fresh cucumbers are at the peak of the season.

1 tablespoon canola oil
1/2 teaspoon rice vinegar
Red pepper flakes, to taste
Pinch sugar
Salt, to taste
Freshly ground black pepper
1/4 cucumber, unpeeled and thinly sliced

In a medium bowl, combine all ingredients except for cucumbers and stir to combine. Add cucumbers, mix well and serve immediately.

Serves 1.
